Three Cheese Kale Pizza
Who would have thought that a Three Cheese Kale Pizza would taste so good? This pizza is truly one of our family’s signature pizza recipes that leaves guests wanting more than one slice!
Three Cheese Kale Pizza
- One package of Colette & Frank’s Gluten-Free Pizza Mix
- One medium zucchini, peeled, and grated
- 4 or 5 mushrooms, sliced
- 1 T olive oil
- 3 or 4 kale stalks, de-veined and chopped
- 1 tsp garlic powder
- 1 T grape seed oil
- 1/2 cup Gouda cheese
- 1/3 cup soft goat cheese
- 1/3 cup Romano cheese
Directions:
Make the pizza crust as directed on the mix. You may want to bake it about 5 minutes longer so that the crust is nice and crunchy. Heat grape seed oil in a medium saucepan over medium-high heat. Add the kale and garlic powder. Cook for 5 minutes. Brush the baked crust with olive oil. Flavored olive oils such as Basil, really enhance the flavor. Spread the grated zucchini, sliced mushrooms, and kale evenly over the crust. Top with the grated Romano and Gouda. Crumble goat cheese on top. Bake on a stone for 15 minutes, or until cheese is melted.
Kale is a superfood. So, not only is this pizza extremely tasty, but it is quite healthy for you too.
Some other tips to consider:
– Add chopped bacon (or turkey bacon).
– Add onions sautéed in balsamic vinegar to add a sweeter flavor.
