Apple Cinnamon Waffles

Year ago, when our daughters were much younger, we would use our pancake mix to make pancakes for them. The girls loved the pancakes, but after a while, we could tell that they were growing tired of the pancakes. Then, for the holidays, their aunt bought them a "Frozen Waffle Maker." The girls were thrilled as the movie Frozen was quite popular at the time.  

The next time I was making pancakes, I thought of the waffle maker and decided to make waffles instead of pancakes. As I thought about it, a new waffle maker requires a new flavor.  After a little bit of thinking, I came up with, what has become in our family, a classic flavor: Apple Cinnamon.

Let start with the basic ingredients:

  • Colette & Frank's Gluten Free Goodness Pancake Mix
  • 1 Tablespoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1 teaspoon Vanilla
  • 2 Eggs (or two egg replacers if you have issues with eggs)
  • 6 Tablespoons Olive Oil
  • 2/3 cup Milk (or milk alternative)
  • 1 medium to large Apple, grated

As far as the apple is concerned, any apple works well. If you want a tart taste to your waffles, then a green granny smith apple is the best choice. However, if you just want a unique flavor, then a pink lady or a honey crisp is a good choice.

The first thing you want to do is to plug in your waffle maker to allow it to warm up while you are preparing the batter!

Grab your mixing bowl and add the dry ingredients and sift. Then add the Vanilla, Eggs and Olive Oil and give it a good mix. This will just clump up. Not to worry. I do it this way so that the eggs and Olive Oil incorporated well into the mix.

Next, add in the milk and mix well until the batter is smooth.

Note on the milk: if you like a light and airy waffle, add in another 2 Tablespoons of milk (or milk alternative).

The last step for the batter is to add in the grated apple and mix well.

With your waffle maker nice and hot, and your waffle batter mixed well, spray your waffle maker with a cooking spray, and add in an appropriate amount of batter.  Cook the waffle batter per the instructions on your waffle maker.

The steam escaping from the waffle maker will create a yummy aroma wafting throughout your kitchen. What a perfect start for your day!
