Ingredients:
- Two Eggs
- 2 Tablespoons Olive Oil
- 1 ½ to 2 teaspoons of Yeast
- ¾ cup hot hot water
- 2 tablespoons cinnamon
- 2 tablespoons of sugar
- 1 package of Colette & Frank’s Gluten Free Goodness Bread Mix
Tools Needed:
- Parchment paper
- Loaf pan – approximately 8.5 x 4.5 x 2.5
- Olive Oil or Cooking Spray
- Mixer with mixing bowl
- Spatula
Directions:
- Add the Cinnamon and Sugar into a bowl and mix. Set aside.
- Pour the contents of Colette & Frank’s Gluten Free Goodness Bread Mix into a mixing bowl with the Yeast and sift.
- Add in the Eggs and Olive Oil and mix by hand for 2 minutes.
- Heat the water (if not hot) in a microwave, add to the bowl and mix.
a. Use a mixer for this step.
b. Mix until the bread dough is smooth. - Place the Parchment paper on a table with the loaf pan at one end .
a. The loaf pan is needed to gauge the width of the bread dough (next step). - Spray the parchment paper with the cooking spray or use the extra olive oil.
- Empty the bread dough from the mixing bowl onto the parchment paper and spread out. The width of the bread dough should match the cavity of the load pan. The length should be 12-18 inches.
- Sprinkle the Cinnamon and Sugar mixture all over the top of the spread-out bread dough. Do your best to distribute the mixture evenly.
- Lifting the edge of the parchment paper closest to you, and using the spatula, roll the dough into a log. Stop before the rolled dough comes off the parchment paper. Lifting from under the parchment paper, drop the rolled-up bread dough into the loaf pan. Discard the parchment paper.
- Place the loaf pan in an arm dry location for 45-60 minutes to allow the dough to rise.
- Pre-heat the oven to 375 degrees.
- Place the loaf pan in the oven for 20 minutes. Then cover with foil.
- Return the loaf pan to the oven for another 30 minutes.
- Remove the foil and return to the oven for 10 minutes or until the top of the loaf is lightly browned.
- Remove from the oven and allow to cool.
- Once cool, remove from the loaf pan and slice to your desired thickness.
