Pumpkin Pancakes

Start with Colette & Frank’s Gluten-Free Goodness Pancake Mix and gather the following ingredients for Pumpkin Pancakes:

  • 3 tsp Pumpkin Pie Spice
  • 2 tsp Cinnamon

Pumpkin Pancakes Recipe

Pour the contents of the Pancake Pix into a bowl. To the dry ingredients add the Pumpkin Pie Spice and Cinnamon.

Then add a 15 oz. can of packed pumpkin and the rest of the wet ingredients as per the instructions. (Olive Oil, Milk or Milk substitute and the Eggs or Egg substitute).

Note: If you did not add the Vanilla, which was optional in the Pancake Mix instructions, then add one tsp now.

Mix thoroughly and cook on a griddle and enjoy with your favorite toppings.
